چکیده

Coliform bacteria have long been associated with a "gassy" deterioration of olives. This deterioration may be characterized by the formation of blisters, resulting from accumulation of gases which separate the skin from the flesh of the olives or by the formation of fissures directly under the skin which may extend to the pit of the fruit as shown in Plate 1. The decomposition is not confined to any one type or variety of olive, but occurs more frequently in olives treated with caustic solutions for the production of "ripe" olives (either "ripe" or ''green ripe" canned olives of commerce) or for green fermented olives. The sodium hydroxide solutions (0.5 to 1.5 per cent) used for destruction of the natural bitterness of the olive and to facilitate production of the color of the finished product renders the olive more susceptible to invasion by destroying the waxy covering of the skin and by neutralizing the acidity. The spoilage most frequently occurs upon leaching with water to remove the spent caustic. Coliform spoilage also has been observed in olives during preliminary storage in salt brines before treating with caustic.I Kossowicz (1908) was probably the first to associate coliform bacteria with decomposition of olives. More recently, Cruess and Guthier (1923), Alvarez (1926) and Tracy (1934) have investigated this problem. Several incompletely described bac-

کارایی ازن زنی و اکسیداسیون پیشرفته (H2O2+O3) در حذف باکتری‌های کلیفرم از فاضلاب خام بیمارستان

Background and Objective: Hospital waste water due to infectious organisms and other risk factors is important. In this study, the possibility of coliform bacteria removal from hospital waste water using ozone separately and combining with hydrogen peroxide (H2O2 + O3) as a pre-treatment was investigated. Material and Methods: This is an experimental study that in the second moiety of 1392 i...

Probiotic Properties and Physicochemical Potential of Lactic Acid Bacteria Isolated from Moroccan Table Olives

Background: Lactic Acid Bacteria are a group of Gram-positive bacteria which are widely used in the food industry as organic ferments called starter cultures. In this study, Enterococcus faecium, Leuconostoc mesenteroides, Lactococcus lactis, Weissella paramesenteroides, and Lactiplantibacillus plantarum isolated from Moroccan table olives were tested for their acquisition of probiotic and tech...

Abnormal fermentations in table-olive processing: microbial origin and sensory evaluation

The process of transformation of table olives from tree to table is the result of complex biochemical reactions that are determined by the interactions between the indigenous microflora of the olives, together with a variety of contaminating microrganisms from different sources [fiber-glass fermenters, polyvinyl chloride (PVC) tanks, pipelines, pumps, and water], with the compositional characte...

The current project is a collaborative action of 14 participants. There are 4 SME-AGs (PEMETE -Greece, ASEMESA Spain, APABI Portugal, AIFO Italy) comprising of table olive producing SMEs and 4 industries producing fermented olives from the main olive producing countries (OLYMP-Greece, JOLCASpain, AZAGAP-Italy and PROBEIRA-Portugal), 3 Research Institutions from Greece (NAGREF), Spain (IG-CSIC) ...

Evaluation of Two Lactic Acid Bacteria Starter Cultures for the Fermentation of Natural Black Table Olives (Olea europaea L cv Kalamon).

The production of Greek-style natural black table olives remains an empirical process relying on spontaneous fermentation despite its economic significance. For this reason producers often resort to increased NaCl concentration of the brine to secure quality of the product. In this study we employ two lactic acid bacteria Leuconostoc mesenteroides subsp. mesenteroides Lm139 and Lactobacillus pe...
